Ingredients

  • 6 medium carrots
  • 1 tablespoon olive oil
  • ¼ teaspoon coarse Kosher salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon unsalted butter melted
  • 1 ½ tablespoons honey
  • 2 cloves garlic minced

Method

  1. Set your air fryer to 370°F and let it warm up for 5 minutes.
  2. Cut the carrots into 2-inch diagonal slices and halve or quarter them lengthwise depending on their thickness.
  3. Toss the carrot pieces in a bowl with olive oil, Kosher salt, and black pepper to coat evenly.
  4. Spread the carrots in an even layer inside the air fryer basket and cook for 12 minutes at 370°F, giving the basket a good shake halfway to ensure even cooking.
  5. While the carrots are air frying, clean the mixing bowl and whisk together the melted butter, honey, and minced garlic for the glaze.
  6. After the first cook, return the carrots to the bowl and mix them well with the honey garlic butter.
  7. Place the coated carrots back into the air fryer basket and cook for an additional 6 to 8 minutes until they turn tender inside and beautifully golden around the edges.
  8. Serve hot for the best flavor and texture.

Notes

  • This recipe yields three modest servings or two larger portions and can be doubled if needed. For bigger batches, cook the carrots in multiple rounds and briefly reheat all together in the air fryer for 1-2 minutes to serve warm.
