Cut the chicken breasts into thin strips.
In a mixing bowl, combine garlic powder, paprika, salt, and black pepper.
Add chicken strips and toss to coat evenly.
Preheat air fryer to 375°F (190°C) for 3-5 minutes.
Spray air fryer basket with cooking spray.
Place chicken strips in a single layer in the basket.
Cook for 8 minutes, flipping halfway through until golden brown and cooked through.
Remove chicken from air fryer.
On each tortilla, layer fresh spinach, shredded mozzarella cheese, and cooked chicken strips.
Roll tortillas tightly to enclose filling.
Spray outside of each wrap lightly with olive oil spray.
Place wraps seam-side down in air fryer basket.
Air fry wraps at 375°F (190°C) for 2-3 minutes until tortillas are crispy and golden.
Remove wraps and let cool slightly.
Slice each wrap in half and serve with ranch dressing if desired.
