Ingredients
  

  • 2 boneless skinless chicken breasts cut into strips
  • 1 red bell pepper cut into ¼" slices
  • 1 yellow bell pepper cut into ¼" slices
  • 1 green bell pepper cut into ¼” slices
  • ½ yellow onion cut into ¼” slices
  • 2 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • tortillas
  • sour cream
  • guacamole

Method
 

  1. Combine chili powder, paprika, cumin, onion powder, garlic powder, salt, and black pepper in a small bowl and stir with a fork to form the seasoning.
  2. In a large bowl, place the chicken strips, sliced onions, and bell peppers, then drizzle with olive oil and mix thoroughly. Sprinkle the seasoning over and toss to cover everything evenly.
  3. Transfer the seasoned mixture into the air fryer basket.
  4. Set the air fryer to 350 degrees Fahrenheit and cook the mixture for 16 to 20 minutes, shaking or stirring the contents halfway through at around 9 minutes to promote even cooking.
  5. Once cooked thoroughly, spoon the fajita mix into tortillas and top with sour cream, guacamole, and optional chopped cilantro before serving.

Notes

  • If you don’t have all the individual spices, you can substitute with store-bought fajita seasoning. Try cutting the chicken as evenly as possible for uniform cooking. Avoid layering the ingredients too heavily in the air fryer basket to allow proper browning. For convenience, prep the chicken and vegetables up to 3 days ahead and store refrigerated. Add lime juice after cooking to brighten the flavor. These fajitas work great over rice or salad instead of just tortillas.
