Air Fryer Orange Dijon Chicken Comforting Easy Weeknight

Ingredients
  

  • 4 boneless skinless chicken thighs, raw (approx 350g/12.5oz)
  • salt and black pepper
  • 2 tablespoon of honey
  • 3 tablespoons of fresh orange juice
  • 1 tablespoon of Dijon mustard
  • 2 green onions (spring onions), finely sliced
  • 1 teaspoon of chopped garlic
  • olive oil spray

Method
 

  1. Generously season the chicken thighs with salt and black pepper.
  2. In a mixing bowl, whisk together honey, fresh orange juice, Dijon mustard, and chopped garlic until well combined.
  3. If possible, place chicken into the marinade and refrigerate for a while to infuse flavors, but it’s fine to cook immediately if short on time.
  4. Turn on the air fryer and preheat it to 200°C (400°F) for about 2 minutes.
  5. Arrange the chicken pieces in a single layer inside the air fryer basket and spoon some marinade over each piece. Lightly spray the top of the chicken with olive oil.
  6. Cook the chicken for 8 minutes, then open the air fryer and brush the pieces with additional marinade before cooking for another 7 to 8 minutes, until the edges turn golden and the chicken is fully cooked.
  7. Once cooked, scatter the sliced green onions over the chicken.
  8. Serve the chicken hot alongside your favorite sides and enjoy a comforting family meal!

Notes

  • This recipe is gluten free friendly if you use gluten free mustard and dairy free as is. For best flavor, marinate the chicken ahead of time.
