Preheat air fryer to 400°F (200°C).
In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, Italian seasoning, salt, and pepper.
Pat the chicken breasts dry and rub minced garlic evenly over them.
Spray chicken breasts lightly with olive oil.
Dredge each chicken breast in the Parmesan breadcrumb mixture, pressing gently to adhere the coating.
Place coated chicken breasts in the air fryer basket in a single layer.
Spray the top of the chicken lightly with olive oil.
Cook for 15 minutes, flipping halfway through, until chicken is golden brown and cooked through (internal temperature 165°F / 74°C).
Remove from air fryer and let rest for 5 minutes before serving.
