Trim the chicken thighs and cut them into bite sized pieces, then set aside.
Combine cornflour, salt, pepper, garlic powder, and paprika in a bowl.
Add the chicken pieces to the bowl and toss until each piece is evenly coated.
Pour the oil over the coated chicken and mix well so it becomes sticky and well covered.
Arrange the chicken chunks in the air fryer basket and cook at 190C/375F for 15 to 18 minutes, shaking the basket three times during cooking to prevent sticking.
Mix all sauce ingredients in a microwave-safe bowl and heat for about 3 minutes on high, stirring each minute until the sauce thickens slightly.
After cooking, transfer the chicken to a bowl and coat thoroughly with the prepared sauce.
Sprinkle sesame seeds and chopped spring onions on top and serve alongside boiled or egg fried rice.
