Ingredients
  

  • 5 pcs cucumbers
  • 3 tsp granulated white sugar
  • 2 tsp sesame seeds
  • 1 tsp garlic, crushed
  • 2 to 3 tbsp green onion, chopped
  • 1 ½ tbsp soy sauce
  • 3 tsp rice vinegar
  • 3 tsp Chinese chili oil
  • 1 tsp sesame oil
  • 3 tsp salt

Method
 

  1. Collect all the ingredients needed for the cucumber salad.
  2. Combine the sugar, sesame seeds, crushed garlic, and chopped green onion in a mixing bowl.
  3. Pour in the soy sauce, rice vinegar, chili oil, and sesame oil, then stir everything together and set the dressing aside.
  4. Trim the ends off each cucumber, then position a pair of chopsticks alongside to prevent cutting all the way through.
  5. Slice diagonally along the cucumbers to make spiral cuts, then flip and cut perpendicularly on the smooth side; repeat for all cucumbers.
  6. Put the cucumbers in a bowl, sprinkle with salt, and gently rub it in to start the crisping process; let them rest for 8 to 10 minutes.
  7. Rinse the salted cucumbers under cold water to remove excess saltiness.
  8. Drain any extra water, then pour the prepared marinade over the cucumbers and toss until evenly coated. Serve and enjoy!

Notes

  • Always slice the cucumbers at an angle to create the distinctive spiral shape. Salting the cucumbers helps them stay crisp, but be sure to rinse the excess salt off thoroughly, up to three times if needed.
