Ingredients
  

  • 28 ounces frozen fries
  • 1 1/2 cup shredded cheese - queso quesadilla or Oxaca or Monterey Jack
  • 1 1/2 cups birria liquid drained
  • 1/4 cup diced white onion
  • 1/4 cup cilantro
  • Guacamole optional
  • Sour cream optional

Method
 

  1. Cook the frozen fries following the package directions until crispy.
  2. While the fries cook, gently warm the birria in a small pan over low to medium heat, lowering heat if it starts to bubble.
  3. Transfer the cooked fries onto a baking tray or a large serving plate.
  4. Layer half of the shredded cheese evenly over the fries, then spoon the warmed birria on top.
  5. Sprinkle the rest of the cheese over the birria and finish with diced white onion and fresh cilantro.
  6. Add guacamole and sour cream if you like, creating a rich topping.
  7. Serve these loaded fries hot alongside a bowl of consomé for dipping.
