  • 2 large chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Method
 

  1. Preheat Oven: Start by preheating your oven to 425°F (220°C).
  2. Prepare Sweet Potatoes: Toss the diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet.
  3. Bake Sweet Potatoes: Roast sweet potatoes for 20-25 minutes until tender and caramelized.
  4. Season Chicken: Rub chicken breasts with 1 tablespoon olive oil and coat with Cajun seasoning.
  5. Cook Chicken: Heat skillet over medium-high heat and cook chicken 6-7 minutes per side until 165°F (75°C). Remove and rest.
  6. Sauté Veggies: In skillet, sauté onion, bell pepper, and broccoli for 5-7 minutes until tender-crisp.
  7. Slice Chicken: Slice rested chicken into strips.
  8. Assemble Bowls: Layer roasted sweet potatoes, sautéed veggies, and sliced chicken in bowls.
  9. Garnish and Serve: Top with fresh cilantro and serve with lime wedges for extra flavor.

Notes
