  • 2 light laughing cow cheddar cheese wedges
  • everything bagel seasoning, to taste
  • 1/2 tsp chili crunch, oil drained
  • Optional: green onions or fresh herbs like parsley or cilantro for garnish

Method
 

  1. Cut each mini sweet pepper in half lengthwise and remove the seeds completely, then arrange them on a serving plate or tray.
  2. In a small mixing bowl, combine the fat-free feta cheese and the light Laughing Cow cheddar cheese wedges thoroughly.
  3. Microwave the cheese mixture for about 30 seconds just until it softens, then stir in everything bagel seasoning and the drained chili crunch until smooth.
  4. Spoon the cheese blend into each pepper half, filling them generously but carefully.
  5. Serve these stuffed peppers right away, garnishing with green onions or your choice of fresh herbs for a vibrant finish.
