In a bowl, toss salmon bites with cornstarch, salt, and black pepper until evenly coated.
Lightly spray or brush the air fryer basket with olive oil.
Place salmon bites in the basket in a single layer and air fry for 8 minutes, shaking halfway through.
While salmon cooks, prepare the honey garlic sauce by combining soy sauce, honey, minced garlic, grated ginger (if using), and water in a small saucepan.
Heat the sauce over medium heat until slightly thickened, about 3-4 minutes.
Once salmon bites are cooked, transfer to a bowl and toss with the honey garlic sauce.
Garnish with sesame seeds and chopped green onions.
Serve immediately with rice, veggies, or salad.
