Ingredients

  • 2 lbs large potatoes peeled and cubed into 1-inch cubes (4 potatoes)
  • 2 cups chicken broth
  • 8 oz bacon bite-sized pieces cooked
  • 1/2 medium onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp salt or to taste
  • ¼ tsp ground black pepper or to taste
  • 4 Tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup mild or sharp cheddar cheese shredded
  • 3/4 cup sour cream
  • green onions to serve

Method

  1. Place the peeled and chopped potatoes, chicken broth, cooked bacon, chopped onion, minced garlic, salt, and pepper into your crockpot.
  2. Set your slow cooker to high and let it cook for 3 to 4 hours, or choose low and cook for 5 to 6 hours until the potatoes are soft enough to pierce easily with a fork. Then, gently mash the potatoes inside the pot.
  3. Stir in the unsalted butter, flour, milk, shredded cheddar cheese, and sour cream until everything is smoothly combined, then let the mixture simmer on low heat for 30 to 60 minutes to thicken and become creamy.
  4. Top the soup with chopped green onions and any other favorite garnishes you like.
  5. Dish out the soup, share with friends, and enjoy a comforting bowl of homemade goodness!

Notes

  • For best melting, grate your cheese fresh. Boost the flavor by topping with extras like bacon bits, chives, extra sour cream, cheese, or a splash of hot sauce. Store leftovers in the refrigerator for up to 3 days.
