Collect all the ingredients needed to make the Asian cucumber salad.
In a mixing bowl, combine sugar, sesame seeds, crushed garlic, and chopped green onion.
Add soy sauce, rice vinegar, chili oil, and sesame oil to the bowl and mix well, then set this dressing aside.
Trim both ends off each cucumber and place each between a pair of chopsticks to prevent slicing through.
Make angled diagonal cuts along the cucumber lengthwise, then turn it over and make diagonal cuts perpendicular to the first, creating spiral slices.
Place the cucumber spirals in a bowl; sprinkle with salt and gently massage the salt into the cucumbers. Let them rest for around 8 to 10 minutes.
Rinse the salted cucumber spirals thoroughly under cold water to remove excess salt.
Drain the cucumbers well, then pour the prepared dressing over them and toss everything until the cucumbers are evenly coated. Serve chilled and enjoy!
