Ingredients
  

  • 2 large cucumbers, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh dill, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. Toss the sliced cucumbers, red, yellow or orange bell peppers, and red onion together in a big bowl.
  2. In a separate small bowl, blend the olive oil, apple cider vinegar, lemon juice, and honey until smooth.
  3. Drizzle this dressing over the vegetables and stir to coat everything evenly.
  4. Sprinkle the chopped fresh dill on top and mix again gently to combine all flavors.
  5. Add salt and pepper according to your taste preference.
  6. Pop the salad into the fridge for 15 minutes so the flavors can come together.
  7. Serve the salad cold as a refreshing side or a light main for any meal.
