Earth Chia Pudding - Easy and Fun Kid-Friendly Breakfast

Ingredients
  

  • 6 tbsp chia seeds
  • 1 cup nut milk I used @whatiffoods
  • ½ cup coconut milk
  • 6 tbsp coconut yogurt
  • 1 tbsp blue spirulina
  • 4 tbsp maple syrup
  • 2 tbsp Greek style vegan yogurt
  • ½ tsp matcha powder

Method
 

  1. Start by mixing the chia seeds, nut milk, coconut milk, coconut yogurt, blue spirulina, and maple syrup together in a bowl until everything is well blended.
  2. Allow the mixture to rest for about 5 minutes, then stir again to break up any clumps and ensure a smooth texture.
  3. Transfer the pudding into a container or individual portions, cover, and place in the fridge to chill for at least 2 hours.
  4. When ready to serve, scoop the pudding into small bowls.
  5. In a separate bowl, blend the Greek style vegan yogurt with matcha powder, then carefully spoon small dollops onto the pudding to create shapes resembling countries, adding a playful earth-themed touch.

Notes

  • For best texture, ensure to whisk well after the initial resting time. This pudding can be stored in the fridge for up to 2 days. Using natural nut milk and coconut yogurt supports a vegan and sustainable diet.
