This easy low carb chicken casserole is a keto-friendly, healthy, and delicious dinner option featuring chicken, bacon, and veggies in a creamy ranch sauce topped with melted cheese.

Ingredients
  

  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon
  • 5 cups broccoli florets OR 1 pound thawed frozen spinach (well-drained)
  • 3 cloves minced garlic
  • 1 cup ranch dressing
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • For the topping:
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Optional:
  • 1-3 teaspoons ranch seasoning mix (for added flavor)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, chopped bacon, broccoli florets (or well-drained spinach), and minced garlic.
  3. Add ranch dressing, shredded mozzarella, and cheddar cheese to the mixture. If desired, stir in 1-3 teaspoons ranch seasoning mix for extra flavor. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
  5. Sprinkle the topping cheeses (1/2 cup mozzarella and 1/2 cup cheddar) evenly over the casserole.
  6. Bake in the preheated oven for 15-20 minutes until bubbly and cheese is melted and slightly golden.
  7. Remove from oven and let it rest for 5 minutes before serving.

Notes

  • You can prepare this casserole in a crockpot by combining all ingredients (except topping cheese), cooking on low for 3-4 hours, then adding the topping cheese and broiling briefly to melt. Store leftovers in an airtight container in the refrigerator for up to 3 days.
