Ingredients
  

  • 1 lb Ground Chicken (92/8)
  • 1/2 Tbsp (8g) Chili Oil
  • 1/2 C (96g) Swerve Brown Sugar
  • 1/4 C (60g) Buffalo Sauce
  • 2 Tbsp (30g) Cider or Rice Vinegar
  • 1 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Red Pepper Flakes

Method
 

  1. Heat a skillet over medium-high heat with the chili oil.
  2. Brown both sides of the ground chicken, about 3-4 minutes per side.
  3. Mince the chicken in the skillet and cook fully.
  4. While the chicken cooks, whisk the remaining ingredients together in a mixing bowl.
  5. Once the chicken is fully cooked, add the sauce to the pan.
  6. Cook the chicken with sauce until it becomes thick and syrupy.
  7. Serve topped with scallions and toasted sesame seeds over rice or cauliflower rice.

Notes

  • For a lower carb option, serve over cauliflower rice instead of regular rice. You can adjust the red pepper flakes to control the heat level. Store leftovers in an airtight container for up to 3 days.
