  • 2 lbs boneless skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes quartered
  • 1 lb whole carrots peeled and cut into chunks
  • 6 cloves garlic minced
  • 1/2 cup (1 stick) unsalted butter melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley optional for garnish
  • 1/2 cup chicken broth

Method
 

  1. Place the chicken, potatoes, and carrots into the base of your slow cooker.
  2. In a separate bowl, whisk together melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth until combined.
  3. Drizzle the garlic butter mixture evenly over the chicken and vegetables, then gently toss to ensure everything is coated.
  4. Cover the slow cooker with its lid and cook on LOW heat for 6 to 7 hours, or choose HIGH heat and cook for 3 to 4 hours.
