Garlic Parmesan Chicken and Potatoes Skillet Easy Weeknight Dinner

This Garlic Parmesan Chicken and Potatoes Skillet is a perfect easy dinner for a weeknight meal. Ingredients
  

  • 2 chicken breasts, cubed
  • 4–5 small/medium-sized potatoes, cubed
  • Olive oil (for tossing the potatoes)
  • Salt, pepper, garlic powder, paprika (for seasoning potatoes)
  • 2 tablespoons butter
  • ½ teaspoon each of salt and pepper (for seasoning chicken)
  • 1 teaspoon each of paprika, onion powder, and Italian seasoning
  • 2 tablespoons minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (as desired)
  • 1 cup shredded mozzarella cheese

Method
 

  1. Start by washing, peeling, and dicing the potatoes into small cubes. Next, coat them with olive oil along with salt, pepper, garlic powder, and paprika until they’re well covered.
  2. Set your air fryer to 400°F and air fry the potatoes for around 20 minutes. Be sure to shake the basket a couple of times during cooking to ensure they get evenly crisp and tender.
  3. While the potatoes cook, cube the chicken breasts and season them in a bowl with salt, pepper, paprika, onion powder, and Italian seasoning.
  4. Heat the butter in a skillet over medium-high heat and cook the seasoned chicken pieces until they are fully cooked and reach 165°F internally.
  5. Add the minced garlic and as much Buffalo Wild Wings Garlic Parmesan Sauce as you prefer to the skillet. Stir everything together and let it cook for another 1-2 minutes so the chicken absorbs the flavors.
  6. When the potatoes are ready, combine them with the chicken in the skillet, tossing to coat all the pieces nicely with the sauce.
  7. Finally, sprinkle shredded mozzarella cheese on top. Cover the skillet with a lid until the cheese melts, or place the skillet under the broiler for a few minutes until the cheese bubbles and turns golden brown.

Notes

  • For an extra touch of flavor, sprinkle chopped fresh parsley or grated Parmesan cheese before serving. Feel free to adjust the amount of Buffalo Wild Wings Garlic Parmesan Sauce based on how saucy you like your dish. If you don’t have an air fryer, roasting the potatoes in a 400°F oven for 25-30 minutes, flipping halfway, works perfectly.
