  • 2 large sweet potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: ¼ teaspoon red pepper flakes (for heat)

Method
 

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Cut them into 1-inch thick wedges.
  3. Make the Seasoning Mixture: In a small bowl, combine olive oil, minced garlic, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Mix well.
  4. Toss the Wedges: In a large bowl, toss the sweet potato wedges with the garlic oil mixture until evenly coated.
  5. Add Parmesan Cheese: Sprinkle half of the grated Parmesan over the wedges and mix again for even coverage.
  6. Arrange on Baking Sheet: Spread the wedges in a single layer on the prepared baking sheet without overcrowding.
  7. Bake: Bake for 25-30 minutes, turning halfway through, until golden brown and crisp.
  8. Final Touch: Remove from oven and sprinkle remaining Parmesan cheese on top while wedges are hot to slightly melt.
  9. Garnish and Serve: Transfer to a platter, sprinkle fresh parsley on top, and serve immediately with your favorite dipping sauce or enjoy as is!
