Ingredients
  

  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, and fresh dill)

Method
 

  1. In a bowl, combine olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes and whisk until well mixed.
  2. Flatten the chicken breasts to an even thickness and place them in the marinade, letting them soak for at least 30 minutes.
  3. Prepare the tzatziki sauce by blending Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and fresh dill in a separate bowl.
  4. Cook your preferred choice of rice or quinoa following the package directions, and chop all the fresh vegetables to ready.
  5. Heat your air fryer to 380°F and place the chicken inside, cooking for about 10 minutes or until the internal temperature hits 165°F.
  6. Allow the chicken to rest briefly before slicing it; then layer the bowls starting with rice or quinoa, followed by veggies, chicken slices, and finish with a generous dollop of tzatziki sauce.

Notes

  • For best flavor, marinate the chicken longer if time allows. These bowls are great for meal prep and can be stored in the fridge for up to 3 days. Customize with olives or your favorite herbs for added Mediterranean flair.
