Ground Turkey and Rice Skillet Easy Weeknight Dinner

Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 1 lb. lean ground turkey
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced
  • 15 oz. can diced tomatoes, undrained
  • 6 oz. fresh green beans, cut into 2-inch pieces (about 1½ cups)
  • 1½ cups uncooked short or long grain white rice
  • 2½ cups low sodium chicken broth
  • 1 tsp coarse salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ½ tsp dried Italian herbs
  • 1/8 tsp cracked red pepper flakes
  • 2 tsp grainy mustard
  • 2 tsp Worcestershire sauce

Method
 

  1. Warm the olive oil in a large nonstick skillet set over medium-high heat.
  2. Add the ground turkey and diced onion, cooking while breaking up the meat until the turkey is no longer pink and the onion softens, about 3 minutes.
  3. Mix in the minced garlic and cook until aromatic, roughly 20 seconds.
  4. Season with salt and pepper to your liking, then drain any excess fat and return the skillet to the heat.
  5. Pour in the diced tomatoes with their juice, green beans, uncooked rice, chicken broth, garlic powder, Italian herbs, red pepper flakes, grainy mustard, and Worcestershire sauce; stir everything together until well combined.
  6. Increase heat to bring the mixture to a boil, cover with a lid, then lower the heat to maintain a gentle simmer.
  7. Let it cook for 20 to 22 minutes, or until the rice has softened and absorbed the liquid.
  8. Remove from the stove, check seasoning adjustments as needed, and serve hot for a satisfying family dinner.

Notes

  • For a spicier kick, increase the cracked red pepper flakes slightly. Leftovers store well in the refrigerator for up to 3 days and reheat nicely on the stovetop or microwave.
