Ingredients
  

  • 1 cup of cottage cheese (blended until smooth)
  • 1/4 cup pizza sauce or marinara sauce
  • 1 tablespoon gluten-free flour or almond flour
  • 1/4 cup chopped peppers (any color)
  • 1/8 cup sliced red onions
  • 1/8 cup chopped black olives
  • 1 teaspoon oregano (or Italian seasoning)
  • 1/4 cup light mozzarella cheese
  • 4-5 turkey pepperoni slices
  • Salt & black pepper to taste

Method
 

  1. Blend the cottage cheese until smooth.
  2. In a bowl, mix the blended cottage cheese with gluten-free or almond flour and pizza sauce.
  3. Add chopped peppers, red onions, black olives, and oregano to the mixture and stir well.
  4. Season with salt and black pepper to taste.
  5. Transfer the mixture to a microwave-safe bowl and top with light mozzarella cheese and turkey pepperoni slices.
  6. Microwave on high for 2-3 minutes until the cheese melts and the bowl is warm.
