Method
- Toss chicken with cornstarch.
- Heat 1 tbsp oil in a pan, cook chicken until crispy, then set aside.
- In the same pan, add remaining oil and sauté garlic until fragrant.
- Push garlic aside, pour beaten eggs into the pan, scramble until just set.
- Add rice, peas, carrots, and green onions to the pan.
- Stir in soy sauce and oyster sauce, then add crispy chicken.
- Toss everything to combine and serve hot.

- For extra crunch, ensure chicken is coated evenly with cornstarch before frying.
