Ingredients
  

  • 2 sweet potatoes, cubed
  • 1 1/2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1 lb ground beef
  • 1 1/2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp pepper
  • cottage cheese
  • 2 avocados
  • 1/4 cup hot honey
  • chili flakes
  • green onion for garnish

Method
 

  1. Set your oven to 400°F to warm up.
  2. Coat the sweet potato cubes with olive oil and season them with salt, pepper, garlic powder, chili powder, and cumin. Spread evenly on a baking sheet and roast for about 20 minutes until tender.
  3. While the sweet potatoes cook, heat a skillet over medium heat and crumble in the ground beef. Sprinkle the meat with salt, garlic powder, smoked paprika, cumin, chili powder, and pepper. Cook, stirring occasionally, until the beef is fully browned.
  4. Build your bowl by layering the roasted sweet potatoes, cooked ground beef, a generous scoop of cottage cheese, and sliced avocado. Drizzle with hot honey and a pinch of chili flakes, then finish with chopped green onions for a fresh touch.
  5. Serve immediately and enjoy a delicious, nutritious meal.

Notes
