Ingredients
  

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix the Kodiak pancake mix, milk, eggs, and maple syrup until well combined.
  3. Fold in the browned and crumbled sausage and shredded cheese gently.
  4. Spoon the batter into the prepared mini muffin tin cups, filling each about 3/4 full.
  5. Bake for 15 minutes or until the muffins are golden and a toothpick inserted comes out clean.
  6. Allow the muffins to cool slightly before removing from the tin.
  7. Serve warm or store in an airtight container for an easy meal prep breakfast for kids.
