Homemade Easy Chicken Chow Mein Delicious Recipe

Ingredients
  

  • 10 ounces chicken breast, boneless, skinless, cut into bite size pieces
  • 2 tablespoon oil
  • 5 ounces chow mein noodles, (uncooked noodles)
  • 2 cups cabbage, sliced thinly
  • 1 large carrot, julienned
  • 4 green onions, sliced
  • 2 garlic cloves, minced or chopped small
  • 4 tablespoon oyster sauce
  • 4 tablespoon low sodium soy sauce or tamari
  • 2 tablespoon light sesame oil, (not toasted)
  • ½ cup chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon granulated sugar

Method
 

  1. Combine oyster sauce, soy sauce, sesame oil, chicken broth, sugar, and cornstarch in a small bowl, whisk until smooth and set aside.
  2. Cook chow mein noodles according to package instructions, drain, rinse with cold water, and set aside.
  3. Heat 1 tablespoon of oil in a large wok or skillet over medium heat.
  4. Add chicken pieces and sauté until cooked through and golden; remove chicken and set aside.
  5. Add remaining oil to the pan, then add carrot, cabbage, and garlic; stir-fry for 2 to 3 minutes until vegetables soften.
  6. Return chicken and noodles to the pan, pour sauce over, mix well, and cook for 2 additional minutes to combine flavors.
  7. Sprinkle sliced green onions on top and serve the chow mein hot directly from the pan.

Notes

  • For extra flavor, marinate chicken in 1 to 2 tablespoons of the sauce for 30 minutes before cooking. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months. Thaw in the fridge overnight and reheat with added broth or sauce if needed. You can prepare the chicken, veggies, and sauce ahead and store separately for 1-2 days before cooking. To prevent soggy noodles, cook them just until tender and stir-fry on high heat without overcrowding the pan.
