Hot Honey Cottage Cheese Sweet Potato Beef Bowl Recipe

This hot honey cottage cheese sweet potato beef bowl delivers a perfect balance of flavors and protein, making it an ideal lunch or dinner option. The sweet roasted sweet potatoes paired with seasoned ground beef, creamy cottage cheese, and a spicy-sweet drizzle of hot honey make each bite deliciously satisfying and nutritious.

Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 2 tbsp neutral oil
  • 1/2 tsp cinnamon optional
  • 1 lb ground beef lean preferred
  • 2 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 2 cups cottage cheese
  • 2 avocados cubed or sliced
  • 4 tbsp hot honey or to taste

Method
 

  1. Coat the cubed sweet potatoes with neutral oil and season with salt and pepper, then add cinnamon if desired.
  2. Arrange the sweet potatoes in a single layer in your air fryer basket and cook at 400°F for 10 to 15 minutes until they turn golden brown, shaking the basket halfway through for even cooking.
  3. While the sweet potatoes roast, heat a skillet over medium-high heat and cook the ground beef, breaking it apart as it cooks.
  4. Stir in the tomato paste and sprinkle the taco seasoning over the beef, cooking until the meat is fully browned and fragrant.
  5. Once the sweet potatoes are done, evenly portion them and the cooked ground beef into four bowls.
  6. Top each bowl with cottage cheese and sliced or cubed avocado.
  7. Finish by drizzling each bowl with hot honey to taste and serve immediately.

Notes

  • For a crispier sweet potato, make sure not to overcrowd the air fryer basket.
  • Adjust the amount of hot honey based on how spicy and sweet you prefer the dish.
