Ingredients
  

  • 1 pound flank steak (sliced thin)
  • 2 medium bell peppers (red and green, sliced)
  • 1 medium onion (sliced)
  • 2 cloves garlic (minced)
  • 1/4 cup soy sauce (low sodium)
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil (optional)
  • 1 teaspoon sugar (optional)

Method
 

  1. In a small bowl, mix soy sauce, water, cornstarch, ground black pepper, and sugar if using; set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the sliced flank steak and stir-fry until browned but not fully cooked, about 3-4 minutes; remove and set aside.
  4. In the same skillet, add sesame oil if using, then add minced garlic and sliced onions; stir-fry for 2 minutes.
  5. Add bell peppers and continue to stir-fry until they start to soften, about 3-4 minutes.
  6. Return the steak to the skillet and pour the prepared sauce over the ingredients.
  7. Cook while stirring until the sauce thickens and the steak is cooked through, about 3-5 minutes.
  8. Serve hot with steamed rice or noodles if desired.

Notes

  • For extra flavor, marinate the flank steak in soy sauce and black pepper for 30 minutes before cooking. Adjust the amount of black pepper to your taste for more or less spice. Leftovers keep well refrigerated for up to 3 days.
