Pizza Casserole Low Carb Easy Dinner for Busy Nights

Ingredients
  

  • 1 pound ground beef
  • 1 cup pepperoni slices
  • 2 cups cauliflower rice
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Set your oven to 350°F (175°C) to preheat.
  2. Cook the ground beef in a skillet over medium heat until browned.
  3. Remove excess fat, then stir in marinara sauce, Italian seasoning, salt, and black pepper.
  4. Add cauliflower rice and half of the mozzarella cheese, mixing well.
  5. Transfer the mixture into a baking dish evenly.
  6. Sprinkle the rest of the mozzarella cheese on top, then layer with pepperoni slices.
  7. Bake for 25 to 30 minutes until the cheese melts and turns golden.
  8. Allow the casserole to sit for a couple of minutes before serving.

Notes
