Ingredients
  

  • 1 tbsp. avocado oil
  • 2 lbs. lean ground chicken (or ground turkey or meatless crumbles)
  • 1 cup chopped onion
  • 10 oz. can diced tomatoes with green chiles
  • 15 oz. can black beans, drained and rinsed
  • 1 cup sweet corn (fresh, canned, or frozen)
  • 1/4 cup fresh cilantro (optional)
  • 4 tsp. fajita seasoning (2 packets)
  • 24 large lettuce leaves (bib, butter, boston, or romaine)

Method
 

  1. Heat avocado oil in a large skillet over medium heat.
  2. Add chopped onion and cook until translucent, about 3-4 minutes.
  3. Add ground chicken and cook until browned, breaking it apart with a spoon.
  4. Stir in diced tomatoes with green chiles, black beans, sweet corn, and fajita seasoning.
  5. Cook for another 5-7 minutes, allowing flavors to combine and mixture to heat through.
  6. Remove from heat and stir in fresh cilantro if using.
  7. Wash and dry lettuce leaves.
  8. Spoon the chicken mixture into each lettuce leaf and serve immediately or refrigerate for meal prep.

Notes

  • For a vegetarian variation, substitute meat with meatless crumbles. Use taco toppings of your choice like avocado, sour cream, or shredded cheese for added flavor. These wraps store well in the fridge for up to 3 days.
