Strawberry Spinach Salad with Poppy Seed Dressing Easy Dinner

This Strawberry Spinach Salad with Poppy Seed Dressing is a fresh and vibrant spring salad perfect for an easy dinner or a wholesome weeknight meal. Ingredients
  

  • 1 pint strawberries hulled and cut into thin slices
  • 1/2 cup regular or smoked almonds
  • 4 ounces fresh goat cheese crumbled
  • 5 to 8 ounces baby spinach (4 to 5 lightly packed cups)
  • 2 to 4 tablespoons poppy seed salad dressing store-bought or homemade divided

Method
 

  1. Reserve a few of the nicest strawberry slices, almonds, and goat cheese to use as garnish.
  2. Put the baby spinach in a large bowl and add 1 tablespoon of the poppy seed dressing. Toss gently to coat the leaves evenly.
  3. Gradually add more dressing, one tablespoon at a time, until all the spinach is lightly covered.
  4. Add the sliced strawberries, almonds, and crumbled goat cheese to the bowl and gently mix to combine all ingredients.
  5. If you like, transfer the salad to a serving dish, then top with the reserved strawberries, almonds, and goat cheese.
  6. Finish off with a final drizzle of poppy seed dressing over the salad before serving.

Notes

  • For best flavor, use fresh strawberries and serve immediately. You can substitute smoked almonds with regular if preferred. Leftover salad dressing can be stored refrigerated for up to one week.
