Set your oven to 180ºC fan and prepare a 30 x 20 cm baking tray by lining it with non-stick parchment paper and lightly spraying it with cooking oil.
Place the cottage cheese and eggs into a powerful blender, then add any seasonings if you like.
Blend the mixture until it’s completely smooth and pour it evenly into the prepared tray.
Bake the flatbread for about 20 to 30 minutes until it’s fully set and cooked through.
Remove from the oven and let it cool for 10 minutes before carefully peeling it off the parchment and adding your preferred fillings.
