The Easiest High Protein Flatbread for Busy Weeknights

This simple flatbread recipe is perfect for a quick, high protein dinner or an easy dinner solution on busy weeknights. Loved by kids and adults alike, it’s a fantastic way to enjoy a family dinner while getting a nutritious high protein dinner on the table fast.

Servings: 1 large wrap

Ingredients
  

  • 1 cup cottage cheese 250g
  • 2 eggs
  • Optional seasonings - salt pepper or cajun spice or garlic powder etc

Method
 

  1. Set your oven to 180ºC fan and prepare a 30 x 20 cm baking tray by lining it with non-stick parchment paper and lightly spraying it with cooking oil.
  2. Place the cottage cheese and eggs into a powerful blender, then add any seasonings if you like.
  3. Blend the mixture until it’s completely smooth and pour it evenly into the prepared tray.
  4. Bake the flatbread for about 20 to 30 minutes until it’s fully set and cooked through.
  5. Remove from the oven and let it cool for 10 minutes before carefully peeling it off the parchment and adding your preferred fillings.

Notes

  • Enjoy this flatbread fresh for the best texture as it's egg based and can become rubbery if left out too long. Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm gently in a dry pan over low heat or microwave for 10-15 seconds just to soften. Avoid freezing as egg-based bakes do not freeze and thaw well.
